Barbeque Chicken Tacos

You will need:
- boneless, skinless chicken thighs
- barbeque sauce
- corn tortillas
- fresh tomatoes, chopped into small pieces
- lettuce, hand-shredded
- grated jack cheese
- finely chopped jalapeƱo peppers
- sour cream (optional)
- salsa preferably fresh (optional)
Place chicken thighs in a casserole dish with lid. Generously apply barbeque sauce, cover and bake in a 450° oven for 50 minutes. Remove, let chicken cool till you can handle it without burning your fingers. Chop into small pieces.
There are lots of ways to heat tortillas. Use your favorite method. I like to wrap them in tin foil and place them in a warm oven (325°) for about ten minutes.
Fill tacos with chicken and other taco ingredients. These are the most basic. Use whatever you normally use to make tacos.
And, as you can see, I like to enjoy mine with a nice cold Guinness.
