Improvising

I bought some lovely fresh zucchini from Lull Farm on Sunday. I love zucchini! Paul won’t eat it and I wasn’t sure what I was going to do with it. So it sat in the fridge till I could think of something. Yesterday when I was wondering what to have for lunch, all I knew for sure was that I wanted that zucchini.
So I made this, and it was delicious. It worked fine for me as lunch, because I love vegetables, but it would probably work better as a side dish for normal people.
Improvised Zucchini Lunch
Ingredients (i.e. what I had on hand at the moment):
- fresh zucchini, chopped into 1/4 inch wedges
- 1/4 to 1/3 cup vidalia onion, chopped fine
- 1/4 cup of fresh tomato, chopped small
- olive oil
- salt, garlic powder and mrs. dash to taste
- grated jack cheese
Preparation is really simple. Heat the oil on medium, add some mrs. dash, zucchini and onion. Add salt and garlic powder to taste. Saute for about five minutes. Add tomatoes and saute for about a minute more, just to warm up the tomatoes and soften them slightly. Place on a plate and liberally top with shredded cheese.
I’m thinking it would be nice over rice, or maybe you could add some tomato sauce and serve it over pasta. But it was very tasty and I think I’ll be making it again.
