Chicken Soup for the Tummy

I made chicken soup today, and then I ate most of it. It was hard to stop, and of course I ate all the chicken and veggies and left all the broth. So I now have two small containers of chicken broth in the fridge to make something else with.
I’m thinking maybe sausage and black bean soup. Maybe I’ll make that tomorrow.
My super easy chicken soup recipe:
Serves one. Increase portions for more servings.
olive oil & butter
mrs dash
salt
1/2 large onion, chopped coarse
three large garlic cloves, chopped fine
two small potatoes, chopped into bite sized pieces
2 chicken thighs, rinsed with skins removed
Tabasco sauce (optional)
In a medium pot over medium heat, saute onion, garlic, and mrs dash in olive oil and butter till vegetables are soft and translucent. Add water to fill the pot about two-thirds. Add potatoes and chicken. I like to add a few dashes of Tabasco at this point.
Bring to a slight boil, then cover and reduce heat to medium-low. Simmer gently for about thirty minutes or until potatoes and chicken are fork tender. Turn of heat, remove chicken and allow to cool till you can handle it without burning your fingers.
Remove chicken meat from the bones and gently shred with a fork. Or you can chop it into small bits. Replace chicken in pot and stir together. You can reheat it the soup a bit if it has cooled too much. The soup is ready to enjoy. I like to add a few dashes of Tabasco in my bowl, especially if I’m having the soup to treat a cold.
