I love this soup. It’s one of my all-time favorites and is ridiculously easy to make.

You will need:
boneless, skinless chicken thighs
barbeque sauce
corn tortillas
fresh tomatoes, chopped into small pieces
lettuce, hand-shredded
grated jack cheese

3 large ripe tomatoes, chopped into small pieces
2 to 3 tablespoons minced cilantro
1 1/2 to 2 tablespoons lime juice
